Schoolchildren’s likes and dislikes of vegetables

Dislike of a particular vegetable was the main reason given by housewives for not serving them. It seemed interesting to see the children’s attitude to vegetables.

1533 elementary schoolboys and girls from the four towns were given a list of vegetables and asked to indicate, which they liked. The test took place in the classroom. (The test form used and the composition of the sample will be found in Appendix 2).

The results of this test are shown in Table 9. The first interesting fact is that there are relatively fewer children. who have never eaten any particular vegetables than there are housewives who never serve them. This is likely to be due to the influence of school meals.

It is also interesting to note that the proportion of children who dislike a particular vegetable is in most cases of the same order, though a little higher, than the proportion of housewives who never serve them. The exceptions are the vegetables of the cabbage family (cabbage, cauliflower, Brussels sprouts), carrots, and onions, which are disliked by a considerably greater proportion of children than of housewives.

It is probably of practical importance to the organisers of school meals that many more children prefer raw to cooked carrots.
